Old Bay has a hint of celery. Makes great seasoning for a Bloody Mary or just in tomato or V-8 Juice..

And I think I got duped a little. A couple years ago, Old Bay hot sauce was scarce, and expensive. They released a batch called limited edition. That was a way to justify 30-bucks a bottle. I think the limited edition now is just left over packaging from when it was very expensive. I find no difference in the ingredients.

I rarely eat Thai food. My daughter graduated college with high degrees, and we celebrated by going to her favorite Thai restaurant. I wanted a chicken dish that was rated 1-5 on hotness. Five being HOT, and 1 being mild, so I chose #2. That was the first and only time I sent food back to the kitchen. It was too HOT!!! I have the Huy Fong Sirachia sauce, a drop or two is all it takes for me. Taco Bell's Hot sauce is just right on taco's etc. As others have stated, I wish to taste the food I bought, after eating and my tongue and lips still tingle, all is well in my world.

Any difference in the taste or heat level?? Other than a slight celery taste?

So anyone else here a hot sauce enthusiast? For me I always keep trying new things. I have 2 requirements: it has to be hot(extreme compared to others) and an equal part is flavor. Bitter battery acid does nothing for me. These are currently in my inventory of ones to try. I have 5 others open in the Fridge. My hottest at one time (15 yrs ago) was the hottest in the world but has been far surpassed these days. All these are different bases like mustard, grapefruit, berries etc. the heat peppers are habanero, peri peri, serrano, 7 pot, ghost, scorpion, reaper etc. And now my daughter is introducing me to aioli sauces which are more of a sauce to spread on things! Right now I have about 30 sauces to try, 5 favorites and the local stores have at least 100 more to try and I haven't even stated on hot mustards and aiolis yet. It's a BIG hobby!View attachment 44933
I love hot sauces, I buy my Tobasco in the big bottles. I just finished off 2 bottles of Yucateco Red and Green hotsauce. I also like hot spices for Mt steaks and hamburgers. I got one a little while back called sweet heat..pretty good stuff. Peppers actually raise your metabolism.

This is pretty good for those who like a sweeter sauce, and want some extra kick, but can't take the real hot stuff.

I'm not into Habanero or other super hotties. My go to is Franks Red Hot. I also like Crystal Pure Louisiana Hot Sauce since I read that Dickie Brennan preferred it in his NOLA restaurants. Good enough for me. It's a little thinner than Franks but equally tasty.

Not a fan of Tabasco, too much vinegar, I do keep Cholula and Tapatio, found out that Tapatios flavor becomes better once it darkens, when first opened it's more reddish, after it's been open for a few weeks it gets more brownish and the flavor really comes out.
Louisiana hot sauce is also kept around and used as I feel like it, when I was a kid I used to put it on Saltines as a snack also loved it on popcorn.

Nearly every cafe in town makes their own fresh "chili macho" salsa. They vary in intensity from "blister yer innards" to
"meh".

For the packaged stuff I like the flavor of Cholula Chipotle. Tabasco is too vinegary for my liking.

I've burned myself out inside over the decades with them all & sadly have to abstain......so carrying this is as near as I get to it.

Even though I can't partake that doesn't mean I have to keep others from their enjoyment.

Spicy is goo until it gets so hot you can't taste the food. There seems to be a trend to proving one's manhood by eating the hottest food possible. I ask my BIL who loves hot stuff what the food tastes like and he can't even tell me. I like to taste the food I eat.

Agree with the Jeep. Texas Pete here. Tabasco is just dangerous! TP on eggs and macaroni just enough to give good flavor. If I put the same amount of Tabasco, it would fry my guts.
Besides, Texas Pete is made rat chere in the Tar Heel State!

You'll probably never see it for sale, but I'm a huge fan of Yucatan Sunshine. It *claims* to be an Habañero sauce, but it's not very spicy (compared to other Habañeros, that is), so I always wonder if they are lying or if they have a special source of less-hot Habañeros. It's got enough kick to be interesting but not punishing, and plenty of other flavor going on.

Years ago the supermarket I frequent carried it on the shelf, but I haven't seen it in the field for a long time. I had to resort to ordering a six-pack of little bottles from Amazon.
