For 49 years wife and I have had a difference of opinion. Do you refrigerate ketchup after opening or not. I say leave it out something that acidic won't spoil, she say refrigerate like Mrs Kerry said before we dumped her.
BTW The ketchup is in the fridge.

The same discussion sometimes involves mayonnaise. The experts say there's enough vinegar in mayonnaise, it should probably survive un-refrigerated.

Ketchup and mayonnaise, or any other condiments... takes up so little room in the fridge, I'm not gonna experiment how much of it I could eat left un-refrigerated on the counter, til my guts explode in fury.

Bored waiting for a part to cool...did some reading and it sounds like you won't die if stored at room temps for maybe
30 days in closed bottles but will keep flavor and consistency better in the fridge.
I have plenty of room in the fridge so there's it's home. Now if I had to choose between beer and ketchup...

Tomato products are pretty acidic. My chili and home-made spaghetti sauce don't get refrigerated. My home-made mustard is out in the garage. Granted it is unopened and the garage is pretty darn cold during the winter.

Worked in a prime-rib dinner house and bar. The mayo would sit out all day on the counter (No.10 can). Overnight, into the cooler where the meat was aged. The cook would make us prime-rib sandwiches on garlic bread with that mayo. Had more "kick"/taste than regular mayo and we never got sick. Maybe the commercial grade has a different recipe?

How 'bout folks that have a tolerance for un-refrigerated or otherwise tainted food? Such things do happen. As a pipefitter/plumber, we seldom got sick. Then a guest comes over and eats your tainted food, not immune from such bacteria. It's just not worth the chance to me.

So if I am anywhere, and am served open and unrefrigerated condiments, please let me know so I have a choice not to use them.

I guess I don't truly know what's acceptable or unacceptable, except to me.

I don't refrigerate ketchup, mustard or hot sauce. Because I prefer them at room temperature...And, it's gone around here in 2-3 months or less. We do keep some in the refrigerator as well, for those who feel differently.
